Windows 11 Setup - "Files can't be kept..." (aka complete formatting)

Hello ! I have been trying to install Windows 11, but once installation is at 70%, it opens up a setup window which gives me 3 storage option, keeping everything, only deleting settings or deleting everything. For some reason, I can only choose the last option, forcing me to wipe all my drives. I'm running Windows 10 21H1 Build 19043.1266 with Windows fully up to date.

And I've already tried deleting that KB update with random numbers in control panel as said on other forums, but still can't keep the files.
My 500GB SSD which has windows is in GPT while the two other drives (1 hdd and ssd) are MBR.
Any help is greatly appreciated :)
